3 dessert recipes for an intimate Valentines Day by Chef Bianca Manik, Blanchette

In years past, you spent your Valentine’s Day wining and dining at restaurants, catching a movie, or hitting the town with your sweetheart by your side. Although some of your holiday activities may be put on pause this year, there are still so many ways that you can shower your valentine with love on February 14. Since food is the way to the heart, the easiest — dare we say, best — way to express your love is by cooking for your better half! Chef Bianca Manik shares her top 3 dessert recipes with us!

Chocolate Fudge Brownies

200g castor Sugar 

2 Eggs

100g cocoa

113g butter, melted

60g flour

1 teaspoon salt

Toppings: chocolate chunks, walnuts, sea salt.

Preheat the oven at 160°C

Grease and line a 8 inch square cake pan with parchment paper 

Melt the butter, allow to come to room temperature.

Whisk together the egg and the sugar until fluffy and pale in colour, this would take about 5 minutes. 

Sift together cocoa, salt and the flour, fold it into the egg mixture. 

Fold in the melted butter, and toppings (optional)

Pour into the lined cake pan, bake for 20-25 minutes or until a knife comes out mostly clean.

Allow to cool and remove from pan

Two Ingredient Chocolate Mousse

100g good quality 70% Dark Chocolate

75g Water 

15ml alcohol (optional)

Melt the chocolate over a double boiler/ in a microwave.  

Add the water to the chocolate and whisk until combined. Bring to room temperature, and continue whisking on a water bath. Add alcohol. 

Allow the mousse to thicken further in the refrigerator.

Peanut Butter Mug Cake

30g peanut butter

45g castor sugar

60ml milk

a pinch of salt

¼ teaspoon baking soda

2 tablesppons chocolate chips

Whisk all the ingredients, apart from the chocolate chips together until well combined.

Add the chocolate chips and place inside a microwave safe mug.

Cook in the microwave for 45-60 seconds. Allow to cool and serve with your favourite icecream!
