A hearty frittata is perfect for a lazy weekend and leftovers can be carried into the week to create a decadent Frittata Sandwich. Here is an Easy Fritatta Recipe straight from our Editor’s Kitchen that is bound to make your weekend every more fun and delicious.
Ingredients:
- Eggs (4)
- Salt & Pepper
- Dried Mixed Herbs
- Potatoes (2)
- Courgettes (1)
- Peppers (1)
- Milk (100ml)
- Olives (10)
- Spicy Cheddar (100grams)
- Garlic (1)
- Chillies (2)
- Olive Oil
Method:
- Step One: Use a round/square baking dish and cut potatoes using a mandolin thinly. Then add garlic, salt, chilli, mixed herbs and olive oil. Put the dish in a preheated oven at 190C for 25 minutes
- Step Two: Cut the courgettes into half-moon shapes and thinly slice the peppers. Add both to the dish and bake for a further 10 minutes.
- Step Three: Now in a bowl whisk egg, salt, olives, cheddar and milk. Season to Taste and add extra chillies if you like at this stage to the dish and bake for a further 15 minutes. Run a knife or skewer through the middle to check the eggs have cooked through properly.
Serve with a side salad and your favourite condiments. Don’t forget the orange juice and the coffee.
