Ingredients for No bake Granola Bar:
- ½ cup rolled oats
- ½ cup unsweetened peanut butter
- ½ cup honey
- ¼ cup almonds
- ¼ cup Pumpkin seeds
- ¼ cup Chia seeds
- ¼ cup shredded coconut
- 1 tablespoon flaxseed meal
- 1/2 teaspoon cinnamon powder
For topping:
- 1 tablespoon roasted almonds (roughly chopped)
- 2 tablespoons Melted chocolate
Method:
- In a pan, toast Oats until slightly golden brown and set aside. In the same pan, toast Almonds, Chia seeds, Pumpkin seeds and shredded coconut until golden brown and keep aside.
- In a mixing bowl, add toasted oats, toasted nuts and seeds, flaxseed meal, cinnamon and mix well.
- In a saucepan, add peanut butter & honey and place over low heat. Stir often until the mixture is smooth and creamy. Remove from heat and immediately pour over the toasted Oats, nuts & seeds mixture. Mix well using hands to create the Granola Bar mixture.
- In a pan, toast Oats until slightly golden brown and set aside. In the same pan, toast Almonds, Chia seeds, Pumpkin seeds and shredded coconut until golden brown and keep aside.
- In a mixing bowl, add toasted oats, toasted nuts and seeds, flaxseed meal, cinnamon and mix well.
- In a saucepan, add peanut butter & honey and place over low heat. Stir often until the mixture is smooth and creamy. Remove from heat and immediately pour over the toasted Oats, nuts & seeds mixture. Mix well using hands to create the Granola Bar mixture.
- Line a rectangular tray or loaf tin with parchment paper; pour the granola bar mixture in it and spread out evenly, then press down in the tray very firmly.
- Top with roasted almonds and drizzle melted chocolate
- Chill in the refrigerator for an hour or until the mixture has hardened. Unmould from the tray and cut into bars. Store individually wrapped bars in the fridge. When refrigerated, the Bars can last for up to a week.
