  1. Bread Rolls 

This insanely delicious deep-fried potato snack will simply tantalise your taste buds. Pair this up with piping hot tea/coffee and binge on this amazing snack. 

Ingredients: Serves

  • Potatoes – 4 (big size) 
  • Onions – 1 big (finely chopped) 
  • Bread – 8/10 slices 
  • Green Chillies – as per taste (finely chopped) 
  • Coriander & Cumin seeds powder – 3 teaspoons 
  • Amchur powder – 1/2 teaspoon OR Lemon Juice (half lime) 
  • Salt – as per taste 

Process: 

  • Boil potatoes, peel, and mash 
  • Add: Onions, chillies, coriander & cumin seeds powder, amchur powder, salt and mix well with the mashed potatoes. Set aside 
  • Take half bowl water and add 1 teaspoon salt to it. 
  • Take 1 bread slice at a time, dip it in water and squeeze it with your palm. 
  • Put the prepared potato mixture into the bread and wrap it (should be covered with bread completely)
  • Heat oil in a pan and deep fry the rolls 
  • Garnish with onion rings and coriander

    2.Honey Chilly Potato 

This snack is something you just cannot resist. The taste and flavour of this dish can be brought home in a few easy steps 

Ingredients – Serves 4 

  • Potatoes – 5 (big size) 
  • Corn Starch – 2 tablespoon 
  • Spring Onions – as per taste 
  • Ginger Garlic paste – 1.5 tablespoon 
  • Schezwan Sauce – 2 tablespoon 
  • Soya Sauce – 1 tablespoon spoons 
  • Tomato Ketchup – 2 tablespoon 
  • Honey – 1.5 tablespoon 
  • Salt – as per taste 
  • Pepper – as per taste 

Method – 

  • Cut potatoes in long strips, add corn starch, 1/2 teaspoon salt, deep fry and set aside 
  • In a pan add 2 tablespoons oil, whites of spring onion, ginger garlic paste and sautéed till the onions turn golden brown 
  • Add schezwan sauce, soya sauce, tomato ketchup, vinegar, salt, pepper, spring onion (greens) to the mixture 
  • Add honey and mix well 
  • Lastly add potatoes and stir for a minute 
  • Garnish with sesame seeds and greens of spring onion 
  • Serve hot 

    3. Herbed Rice 

This aromatic rice is a go-to dish! Prepared within a few minutes every bite into this flavourful rice is so satisfying 

Ingredients – Serves 3 

  • Cooked Rice – 1 big bowl 
  • Butter – 2 tablespoon 
  • Green Garlic – as per taste 
  • Spring onions – as per taste 
  • Chili Flakes – 1 teaspoon 
  • Mixed Herbs – 2 teaspoon 
  • Lime – 1/2 small 
  • Salt – as per taste 

Method – 

  • In a pan on low flame add: 
  • Butter (NO GHEE NO OIL) 
  • Green garlic (sauté till golden brown) 

Then add 

  • Spring Onion Whites 
  • Chilli flakes 
  • Mixed herbs 
  • Salt 
  • Greens of spring onion 

Mix well 

  • Lastly add COOKED RICE 
  • DO NOT FORGET TO SQUEEZE LIME

    4. Pocket Sandwich 

This sandwich is innovative, colourful, and just gives a delight of experiencing 2 flavours/taste in 1 sandwich. Quick, easy, and just so different from the usual sandwiches

      Ingredients – Serves 2 

  • Bread – 4 pieces 
  • Boiled potato – 2 small 
  • Carrot – 1/2 carrot 
  • Onion – 1/2 onion 
  • Capsicum – 1/2 capsicum 
  • Tomato ketchup – as per taste 
  • Chilli flakes – a pinch 
  • Homemade green chutney – as per taste 
  • Salt – as per taste 

Method 

  • Take 4 pieces of bread and cut into a round shape with a help of a circular plate/ bowl
  • Mixture: grated boiled potato + grated carrot + finally chopped onions & capsicum + salt 
  • Divide the mixture into 2 halfs
  • First half add tomato ketchup + chilli flakes and the second half add green coriander and mint chutney {green chutney} 
  • Take 4 cut pieces of bread and place the mixture into the bread (basically one green & red) 
  • Grease the outer side of the bread and place it on the pan (slow flame). 
  • Wait till both sides turn golden brown 
  • Eat hot and enjoy 

    5. Phirni 

Overtime desserts have matured into a glamorous variety with very fancy toppings and ingredients, however an all-time comfort and easy dessert whose taste and tradition have been carried on from generation to generation is Phirni 

Ingredients – Serves 7/8 

  • Milk – 750 ml 
  • Powdered Rice – 1 cup
  • Sugar – 1 cup 

Method 

  • Soak rice in water for 2 hrs 
  • Strain the water and grind the rice to make a smooth paste in a blender (add a little milk for grinding) 
  • In a pan add milk and sugar. 
  • Mix well till sugar completely dissolves
  • Add the rice paste to the mixture and continuously go on stirring till it becomes thick 
  • At one stage, the phirni will become thick then put a pinch of cardamom powder and stir
  • Immediately pour it small serving bowls 
  • Garnish with chopped almonds, pista and cardamom powder 
  • Refrigerate for 3 hrs to set and then serve
