We spend this Saturday in the kitchen with Karishma Sakhrani, MasterChef India 4 Finalist. Karishma has forged a reputation as the go-to chef for restaurants and brands that champion healthy eating, quality ingredients and great sourcing. She teaches us how to make one of her favourite recipes- Beetroot Quinoa Burger.
Ingredients
For the patty:
- 3 medium beetroots -roasted
- roasted 1 small sweet potato- roasted
- 1⁄2 cup cooked quinoa
- 1⁄4 cup almond meal
- 1-2 green chilies
- 2-3 cloves garlic
- 1-2 tbsp fresh thyme
- Salt
For the salad:
- A handful of baby spinach
- 1/2 orange segmented
- 1 tbsp alfa sprouts
- 1 tsp pumpkin seeds – toasted
- 1 tsp EVOO
- 1 tsp lemon juice
For the tahini drizzle:
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 tbsp honey
- Salt – to taste
For the assembly:
Flatbread/whole-wheat bun or go bunless!
Method
For the patty: Combine all the ingredients well and shape in to patties. Pan fry on a non-stick pan on a low flame until done, using some olive oil.
For the salad: Dress the spinach in some olive oil and lemon juice and toss with the rest of the ingredients.
For the tahini drizzle: Combine all the ingredients in small bowl.
For the assembly: Top the square flatbread with a scatter of the salad, the patty and the tahini drizzle.
